The Digitalizing Fermentation project will develop a next-generation Industrial Internet of Things solution based on the application of multiple technologies and cross-discipline research, emphasizing biochemistry and data science. PLAATO will effectively transfer the chemical engineer, the lab and the fermentation scientist to the cloud - not just the data - giving an edge in terms of cost control, repeatability and quality to brewing and other businesses relying on fermentation. Real-time fermentation monitoring provides invaluable insight into the inner workings of each beer batch, and provides a new dimension of documentation where new quality parameters can be implemented in the daily workflow. This insight is equally key in the production of wine, cider and spirits, in addition to supporting conventional fermentation and strengthening bioprocessing value propositions such as single cell protein production and microbial cell factories/oil producing microbes. Unique selling points are targeted as follows: * More effective resource utilization (yeast, power, water, infrastructure, re-use of CO2). * Less time and cost spent on manual sampling (improved control, savings). * Learning and optimization (predictability, differentiated offerings, early warnings).
